Hang pendants so the bottom sits about 30 to 36 inches above the countertop. On a standard 36 in counter that puts the bottom of the fixture roughly 66–72 in off the floor — clear of the sightline across the island, low enough to actually light the work surface.
This is common trade practice rather than a published standard. Check the drop against your ceiling height before ordering, because that is what usually decides it.
Island pendants have less room to move than dining chandeliers. The counter is higher, the ceiling is often the same, and the fixture has to stay out of a working sightline.
Measure from the counter, to the lowest point
Measure from the countertop to the lowest point of the fixture — the rim of a shade, not the body. The 30–36 in range mirrors the long-standing convention for chandeliers over a dining table, and islands borrowed it because the problem is the same: light the surface without putting a bright object in anyone’s face.
The ceiling decides before you do
Do the subtraction before you fall in love with a fixture. With a 36 in counter and the bottom at 66 in, an 8 ft ceiling leaves about 30 in for the canopy, the suspension and the fixture itself. A tall pendant will not fit, however short you cut the cord.

Notice that the hanging height does not change with the ceiling. The counter does not move, so neither does the fixture. What changes is how much fixture fits above it.
Two things that go wrong at the right height
Pendants that do not hang straight
Cord-hung pendants are never perfectly plumb or parallel to each other, and the consensus among people who have installed them is that it cannot be fully corrected — a heat gun and careful tensioning only reduce it. Over a row of three at eye level it is obvious. If it will bother you, buy rod-mounted fixtures.
Glare you cannot raise your way out of
An exposed bulb at island height sits close to the eye line of anyone seated at the counter, and raising it does not reliably help — with a dining chandelier, one owner tried every height from 28 to 38 in and saw a bulb at all of them. Use frosted bulbs, stay at or below 3000K, add a dimmer, or pick a shade that recesses the source.
Level them to each other, not just to the counter. Two pendants an inch apart read as a mistake even when both sit inside the correct range. Set them off the counter with a story stick or laser line, not from the ceiling.
